How should I prepare grass-fed beef?

Quite often, I hear from all kinds of folks that they prefer commodity, grain-fed, phosphate and water injected beef because it is more tender than hormone-free, antibiotic free grass-fed beef. I nod respectively while thinking to myself, “What the heck?” or some variation thereof. That “more tender” refrain is a common misconception.  Grain-fed, injected beef
